Polenta with Shiitake Mushrooms

polentaPolenta is a interesting food. Made from corn meal it can be soft and creamy like grits or refrigerated and hardened into something that can be grilled, sauteed or fried. Polenta can be made in about 100 different ways. This particular experiment was one that I came up with on the fly. It combines rich polenta with savory shiitake mushrooms to create a comforting side dish that can be served with everything from grilled steaks to roast chicken.

Instructions
  1. Add the shallots and basil to the room temperature unsalted butter. Mix well and set aside.
  2. Cut the prepared polenta into 1 inch thick rounds and then quarter each round. If you've prepared your own you'll just want to make sure your pieces are about 1 inch square or so.
  3. Heat a medium skillet on medium to medium-high heat.
  4. Add butter mixture to skillet. Stir until melted.
  5. Add polenta and mushrooms.
  6. Saute until polenta is lightly golden brown on the outside, stirring regularly to avoid overcooking any sides on the polenta. It should be done in about 20 minutes.
  7. Sprinkle black truffle salt over the dish and serve immediately.
Recipe Notes

You can make your own polenta and refrigerate it over night instead of buying prepared polenta.
