Couscous and Veggie Salad

  1. Cook couscous according to package directions. You'll want them al dente.
  2. Remove from pan and place in a large bowl.
  3. Add olive oil and stir well to keep couscous from sticking together.
  4. Allow to cool to room temperature.
  5. Cut your peeled cucumber into 1/4 inch thick pieces and quarter the slices.
  6. If you haven't already, chop your basil, dice your onion, and quarter your tomatoes.
  7. Add all ingredients to the couscous in the large bowl.
  8. Stir well, cover and place in fridge until cold.
  9. Serve while cold and garnish with a little fresh cilantro.
Recipe Notes

I prefer using a nice, bright vinaigrette like a citrus dill vinaigrette for this. But, ultimately it should be to your taste.
